Roasted Cod with Coconut Curry

🐟 Ingredients:
For the Cod:

4 cod fillets (5–6 oz each)

2 tbsp olive oil

Salt & pepper, to taste

1/2 tsp turmeric (optional, for color)

For the Coconut Curry Sauce:

1 tbsp oil (coconut or vegetable)

1 small onion, finely chopped

2 garlic cloves, minced

1-inch piece fresh ginger, grated

1–2 tbsp red or yellow curry paste (adjust to heat preference)

1 can (13.5 oz) coconut milk

1 tsp fish sauce or soy sauce

1/2 tsp brown sugar (optional)

Juice of 1/2 lime

Fresh cilantro, for garnish
