1. Roast the Cod:
Preheat oven to 400Β°F (200Β°C).
Pat cod fillets dry. Rub with olive oil, salt, pepper, and turmeric.
Place on a lined baking sheet and roast for 10β12 minutes, or until fish flakes easily with a fork.
2. Make the Coconut Curry Sauce:
While the fish roasts, heat oil in a skillet over medium heat.
SautΓ© onion for 3β4 minutes until soft.
Add garlic and ginger; cook 1 minute.
Stir in curry paste and cook for another minute.
Pour in coconut milk, fish sauce, and sugar. Simmer for 5β7 minutes until slightly thickened.
Squeeze in lime juice, taste and adjust seasoning.
3. Assemble:
Spoon coconut curry sauce onto a plate or shallow bowl.
Place roasted cod fillet on top.
Garnish with chopped cilantro, lime wedges, or sliced chili for heat.
