Mediterranean Salmon Patties 🐟🌿

Ingredients:
2 cans (5–6 oz each) salmon, drained and flaked (or 1½ cups cooked fresh salmon)

1 egg, lightly beaten

1/3 cup breadcrumbs (or almond flour for gluten-free)

1/4 cup red onion, finely chopped

1/4 cup sun-dried tomatoes, finely chopped

2 tbsp Kalamata olives, chopped

2 tbsp fresh parsley, chopped

1 tbsp fresh dill (or 1 tsp dried)

Zest of 1 lemon

Juice of ½ lemon

1 garlic clove, minced

Salt & pepper, to taste

2–3 tbsp olive oil, for pan-frying

Optional Yogurt Sauce (for serving):
1/2 cup plain Greek yogurt

1 tbsp lemon juice

1 tbsp chopped cucumber

1 tsp fresh dill

Salt & pepper to taste
