200g cherry or cocktail tomatoes, sliced
2 tbsp drained capers
2 to 3 tbsp extra virgin olive oil
1 tbsp balsamic or lemon vinegar (your choice)
Salt and freshly ground black pepper
Freshly chopped parsley (optional)
