2 monkfish fillets (approx. 150β200g each)
2 tbsp olive oil
1 tbsp butter
1 lemon (zested and juiced)
2 garlic cloves, finely minced
1 tsp fresh thyme (or Β½ tsp dried)
Salt and freshly ground black pepper
Optional: ΒΌ cup dry white wine
