Preheat the Oven
Preheat your oven to 200°C (390°F).

Prepare the Monkfish
Pat the fillets dry with paper towels. Season generously with salt, pepper, and lemon zest.

Sear (Optional but adds flavor)
Heat olive oil in an oven-safe skillet over medium-high heat. Add the monkfish and sear for 1–2 minutes per side until lightly golden.

Add Flavor
Reduce heat slightly. Add butter, garlic, thyme, and lemon juice to the pan. Spoon the melted butter over the fillets for 30 seconds.

Bake
