Miso Salmon Sinigang: A Sour Delight

Ingredients:

1 lb salmon fillet, cut into chunks

1 tbsp oil

1 medium onion, sliced

2 tomatoes, chopped

1/4 cup white miso paste

1 packet (about 1.4 oz) sinigang mix (tamarind soup base)

6 cups water

1 cup daikon radish, sliced

1 cup eggplant, sliced

1 cup sitaw (long beans), cut into 2-inch pieces

1 cup bok choy or spinach

Fish sauce and pepper to taste
