🥗 No-Cook Mediterranean Veggie & Cheese Kebabs
🧄 Ingredients (makes 6–8 skewers):
1 cucumber, sliced into thick half-moons
1 red bell pepper, chopped into chunks
1 yellow bell pepper, chopped into chunks
1 cup cherry tomatoes
1/2 red onion, cut into chunks
200g (7 oz) halloumi cheese or feta cubes (or marinated tofu for vegan option)
Fresh basil or mint leaves
Wooden skewers (soaked in water if serving later)
🧆 Assembly:
Thread veggies and cheese alternately onto skewers: cucumber, tomato, onion, cheese, pepper, basil leaf, repeat.
Chill in the fridge for 15–20 minutes (optional, for extra freshness).
Drizzle with a little olive oil, salt, and pepper right before serving.
