Chicken and Chickpea Rice

Chicken and Chickpea Rice

500 grams of chicken breast
1 onion
1 teaspoon of salt
For the rice:
1 cup (200 ml)
2 cups of rice
2 cups of chicken broth
1 cup of hot water
1 tablespoon of butter
3 tablespoons of sunflower oil
1 large cup of boiled chickpeas
Salt to taste

First, place the chicken breast in a deep saucepan and pour hot water over it. Add a whole onion, season with salt, and bring to a boil.

Place the rice in the saucepan and add 1 teaspoon of salt. Let it sit in the hot water for half an hour. Mix with your hands to remove any starch.

Drain the water from the boiled chicken. Once the rice has soaked, drain it.

Add the butter and oil to the pot. Once the butter has melted, add the rice and fry over medium heat for 4 minutes. Then add the boiled chickpeas and fry for 1 to 2 minutes.
