Ingredients:
1 ripe banana (the riper, the sweeter and better the combination)
1 cup (about 90 g) rolled oats (thin or thick)
1/2 cup (about 80 g) peanut butter (smooth or crunchy, unsweetened)
1/4 cup (about 40 g) vegan chocolate chips (or chopped vegan chocolate)
1 to 2 tablespoons maple syrup or agave syrup (optional if you want sweeter cookies, depending on the sweetness of the banana and peanut butter)
Optional ingredients (if you want to add more flavor and don’t have to limit yourself to just 5 ingredients):
1/2 teaspoon cinnamon
Pinch of salt (enhances the flavor)
Chopped nuts or seeds (chia, flax, sunflower)
Vanilla extract
Equipment needed:
Baking sheet
Parchment paper
Fork or potato masher
Large mixing bowl
Procedure:

Prepare the oven and the baking tray 🔥
Preheat the oven to 175°C.
Prepare a baking tray and line it with parchment paper.
Mix the ingredients 🥣
In a large bowl, mash the ripe banana with a fork until it forms a paste-like consistency.
Add the oats, peanut butter and vegan chocolate chips (and optionally the maple syrup/agave, if using).
Mix all the ingredients well until it forms a smooth, sticky dough. Use a spoon or your hands.
