These soft, buttery cookies with a hint of anise are a delicious and colorful Easter tradition. The icing can be tinted with pastel food coloring for festive flair.
Ingredients:
For the Cookies:
½ lb butter, softened
1½ cups sugar
6 eggs
2 Tbsp milk
1 tsp anise extract (or substitute with almond extract)
1 tsp pure vanilla extract
8 cups sifted all-purpose flour
6 tsp baking powder
1 tsp salt
For the Butter Icing:
2½ cups confectioners’ sugar (approx. ¾ of a box)
1 stick butter
1 tsp anise extract
6–7 Tbsp milk (for thinning)
Food coloring (optional)
