Ingredients You’ll Need
For the Cabbage Fritters:
4 cups finely shredded green or purple cabbage (about 1/2 medium head)
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1 large egg, beaten
2 green onions, thinly sliced
1 clove garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika (optional, for a hint of smokiness)
Vegetable oil (for frying)
For the Roasted Garlic Dip:
1 whole head of garlic
2 tbsp olive oil (for roasting)
1/2 cup sour cream (or Greek yogurt for a lighter option)
1/4 cup mayonnaise
1 tsp lemon juice
Salt and black pepper to taste
Optional: Fresh parsley or chives for garnish
Step-by-Step Instructions
1. Prepare the Roasted Garlic Dip
Preheat your oven to 400°F (200°C).
Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap it in aluminum foil.
Roast in the preheated oven for 30–35 minutes, until the garlic is soft and golden.
Once cool, squeeze the roasted garlic cloves out of their skins into a small bowl.
Mash the roasted garlic with a fork, then mix it with sour cream, mayonnaise, lemon juice, salt, and pepper. Adjust seasoning to taste.
Cover and refrigerate until ready to serve.
2. Make the Cabbage Fritter Mixture
In a large mixing bowl, combine the shredded cabbage, flour, Parmesan cheese, beaten egg, green onions, minced garlic, salt, pepper, and paprika (if using). Mix until the cabbage is evenly coated and the mixture holds together when pressed.
