Beef tartare with herbs

🍃 Ingredients:

👉 400g of very fresh beef (rump steak, tenderloin, or sirloin)
👉 1 white onion (about 80g), finely chopped
👉 2 tablespoons of olive oil
👉 1 teaspoon of mustard (wholegrain or hot, according to your taste)
👉 1 tablespoon of lemon juice (or white balsamic vinegar)
👉 1 tablespoon of chopped fresh parsley
👉 1 tablespoon of chopped chives (or other herbs: cilantro, basil, etc.)
👉 Salt and pepper (according to your taste)
