There are a few ways to prepare strawberry ganache, and the recipe may vary slightly depending on the desired use (filling or covering) and the intensity of the strawberry flavor you are looking for.
Here are two basic recipes for a smooth and delicious strawberry ganache:
Recipe 1: Simple Strawberry Ganache with White Chocolate
This recipe is ideal for a smoother ganache with a delicate strawberry flavor.
Ingredients:
200g good quality white chocolate, chopped
100g heavy cream (at least 35% fat)
2-3 tbsp good quality strawberry jam (without large chunks of fruit if possible) or strained strawberry puree
Instructions:
Melt the chocolate: Place the chopped white chocolate in a heatproof bowl.
Heat the cream: In a small saucepan, heat the cream over low heat until it starts to bubble around the edges. Do not let it boil.
Combine the cream and chocolate: Pour the hot cream over the chopped chocolate. Leave to sit for a few minutes without stirring.
Mix until smooth: Stir gently with a spatula or spoon until the mixture is smooth and glossy.
Add the strawberry jam/puree: Add the strawberry jam or strained strawberry puree to the ganache and mix gently until fully combined and the colour is uniform.
Chill: Cover the bowl with plastic wrap that touches the surface of the ganache to prevent a crust from forming. Refrigerate for at least 2-4 hours, or until firm enough for desired use.
Recipe 2: Strawberry Ganache with Fresh Strawberries (Bigger Flavor)
This recipe results in a ganache with a more pronounced strawberry flavor.
