Strawberry Ganache: The Recipe for a Smooth and Delicious

200g good-quality white chocolate, chopped
100g heavy cream (at least 35% fat)
100g fresh strawberries, chopped
1-2 tablespoons sugar (optional, depending on the sweetness of the strawberries)
Instructions:

Make the strawberry puree: In a small saucepan, combine the chopped strawberries and sugar (if using). Cook over low heat, stirring occasionally, until the strawberries break down and form a puree. Reduce the puree (optional, for a more concentrated flavor): If you want a more intense strawberry flavor and less liquid in the ganache, cook the puree for a few more minutes, stirring constantly, until it reduces slightly. Let cool completely.

Melt the chocolate: Place the chopped white chocolate in a heatproof bowl.

Heat the cream: In a small saucepan, heat the cream over low heat until it begins to bubble around the edges. Do not let it boil.

Combine the cream and chocolate: Pour the hot cream over the chopped chocolate. Let sit for a few minutes without stirring.

Mix until smooth: Stir gently with a spatula or spoon until the mixture is smooth and glossy.

Add the strawberry puree: Add the cooled strawberry puree to the ganache and mix gently until completely incorporated and the color is uniform.

Cool: Cover the bowl with plastic wrap touching the surface of the ganache to prevent a skin from forming. Refrigerate for at least 2-4 hours, or until firm enough for desired use.

Consistency: For the topping, the ganache should be firm but still pliable. For the filling, it can be a little softer. If the ganache is too hard, let it sit at room temperature for a few minutes or beat it lightly with an electric mixer.
