MEDITERRANEAN CHICKEN QUINOA SALAD WITH TZATZIKI DRESSING

400g chicken breast fillet

2 tbsp olive oil

Juice of half a lemon

2 garlic cloves (minced)

150g quinoa

300ml water or vegetable stock

For the salad:

1/2 head romaine lettuce (striped)

200g cherry tomatoes (halved)

1/2 cucumber (diced)

1/2 red onion (thinly sliced)

50g Kalamata olives

80g feta (crumbled)

Fresh parsley (chopped)
