MEDITERRANEAN CHICKEN QUINOA SALAD WITH TZATZIKI DRESSING

πŸ₯› 150g Greek yogurt

πŸ₯’ 1/4 cucumber (grated)

πŸ§„ 1 garlic clove (chopped)

πŸ‹ Juice of half a lemon

πŸ₯„ 1 tbsp olive oil

🌿 fresh dill (chopped)

πŸ§‚ Salt and pepper

Preparation:

Cook quinoa with water or broth according to the package instructions and let cool.

Season the chicken breast and marinate with olive oil, lemon juice, garlic, and oregano.

Fry in a pan or on the grill until golden brown, then slice.

Place all salad ingredients in a large bowl and mix in the quinoa.

For the dressing, mix all ingredients until creamy.

Arrange the chicken on top of the salad and drizzle with the tzatziki dressing.

Garnish with fresh parsley and serve.
