Baked feta with vegetables (air fryer or oven)
Ingredients:
200 g feta cheese (in a block)
1 zucchini, sliced
1 bell pepper (red, yellow or green), cut into strips
1 small eggplant, diced
1 small red onion, cut into rings
10-12 cherry tomatoes
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp garlic powder
Salt and pepper to taste
Fresh herbs such as basil or parsley for garnish (optional)
Preparation:
With the air fryer:
Prepare the vegetables: Cut the vegetables (zucchini, bell pepper, eggplant, onion and tomatoes) into pieces and place them in a bowl. Drizzle the olive oil over the top and season with salt, pepper, oregano, thyme and garlic powder. Mix well to ensure the vegetables are evenly seasoned.

Prepare the feta: Place the feta cheese in the center of the vegetable mixture, making sure the feta is well embedded in the vegetables.
