Preheat the air fryer: Preheat the air fryer to 180°C.
Cook: Place the vegetables and feta in the air fryer basket, making sure the ingredients are evenly distributed. Cook for about 15-18 minutes, until the feta is softened and the vegetables are lightly browned and tender.
Serve: Remove the dish from the air fryer and garnish with fresh herbs such as basil or parsley, if desired. Serve immediately!
With the oven:
Prepare the vegetables: Chop the vegetables (zucchini, bell pepper, eggplant, onion and tomatoes) and mix them with olive oil, salt, pepper, oregano, thyme and garlic powder in a bowl.
Prepare the feta: Place the feta cheese in the center of a baking sheet and spread the prepared vegetables around it. You can also drizzle the feta with a little extra olive oil to make it even creamier.
Bake: Preheat the oven to 200°C and bake the dish for about 20-25 minutes until the feta softens and the vegetables are golden brown and tender.
Serve: Remove the sheet from the oven, garnish with fresh herbs and serve the dish immediately.
Tips:
You can vary the vegetables depending on the season and preferences (e.g. mushrooms, carrots or broccoli).
If you like your feta particularly creamy, you can press it down lightly while baking to make it even softer.
It goes well with a fresh salad or some rice or bread.
