Ingredients
For the Eggplant Boats:
2 medium eggplants (aubergines), halved lengthwise
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
For the Filling:
1 cup cherry tomatoes, halved
1/2 cup crumbled feta cheese
1 small onion, finely chopped
2 garlic cloves, minced
2 tbsp olive oil
1 tsp dried oregano (or Italian seasoning)
1/4 tsp chili flakes (optional, for a kick)

2 tbsp fresh parsley or basil, chopped
