In the summer, we often have tons of fresh herbs, but in the winter or out of season, growing them can be difficult. Here are three simple tips for storing herbs for later use when you can't cut them fresh.
1. Air-dry
This method works well for hardy herbs like thyme, sage, oregano, and marjoram. Start by carefully selecting the leaves. Shake off any dirt and discard any wilted leaves. When washing herbs, do so carefully and dry them thoroughly to avoid mold. Tie the stems together and hang them upside down in a dry, well-ventilated area out of direct sunlight. To prevent dust, you can cover the packets with paper. Allow the herbs to dry until the leaves start to crumble, then store them in an airtight container.
