Ingredients
500g zucchini
20-30g grated parmesan
1 egg
Black pepper, to taste
1/2 teaspoon dried garlic
2 tablespoons flour (adjust as needed)
Cheese (mozzarella or other hard cheese), to garnish
Vegetable oil, for frying
Salt, to taste
Method
Prepare the zucchini:

Grate the zucchini and sprinkle with salt: Grate the zucchini and place in a colander. Sprinkle with salt and let sit for 10 to 15 minutes to remove excess moisture.
Squeeze the zucchini: After resting, squeeze the zucchini well to remove any remaining moisture. This step is crucial to prevent the burgers from becoming soggy.
Mix the dough:

Mix the ingredients: In a large bowl, combine the grated and juiced zucchini, grated Parmesan cheese, egg, black pepper, and dried garlic.
Add the flour: Gradually add the flour, stirring constantly, until a doughy consistency forms. The mixture should be thick enough to hold together when formed into patties, but not too dry. Adjust the amount of flour as needed.
Form and fry the burgers:

Heat the oil: Heat a generous amount of vegetable oil in a large skillet over medium heat.
Form into patties: Take portions of the zucchini mixture and form into patties.
Cook the burgers: Cook the burgers for about 3 to 4 minutes on each side, or until golden brown and crispy.
