Ingredients
2 liters of whole cow's milk (unpasteurized, not sterilized)
10 tbsp. teaspoon lemon juice
15 drops of rennet
a coagulant cooking thermometer
that curdles milk, available in pharmacies.
Instructions
Heat the milk over low heat in a large saucepan. Wait until the temperature reaches 34 °C.
Turn off the heat and pour the lemon juice and rennet drops into the milk. Mix well.
