No more buying mozzarella: you can make it at home in 30 minutes!

Cover the pan and wait 5 to 10 minutes for the milk to split in two. The curd should have a flan-like consistency.
Cut the curd into squares.
Turn the heat back on and increase the temperature to 40 °C.
Carefully collect the
curd in a sieve using a slotted spoon. Drain it well by pressing it lightly.

As soon as the curd has gained consistency, press it between your hands to drain it as much as possible.
Put the curd in a bowl in the microwave on high power for a minute.
Drain the excess whey and knead the ball again.

Put it back in the microwave for 30 seconds and so on until it has the consistency of play dough.
Now all that's left is to shape the mozzarella into the desired shape.
