Chocolate Coffee Cake with Chocolate Frosting

Ingredients

For the cake

2 large eggs

A pinch of salt

8 grams of vanilla sugar (about 1 1/2 teaspoons)

100 grams of sugar (1/2 cup)

60 ml of oil (1/4 cup)

90 ml of milk (1/3 cup + 1 tbsp)

1 tbsp of instant coffee

140 grams of all-purpose flour (1 cup + 1 tbsp)

20 grams of cocoa powder (2 1/2 tbsp)

7 grams of baking powder (1 1/2 teaspoons)

For the chocolate and coffee frosting

50 grams of sugar (1/4 cup)

1 tbsp of instant coffee

1 tbsp of cocoa powder

200 ml of milk (3/4 cup + 1 tbsp)

100 grams dark chocolate (3.5 oz), chopped

30 grams butter (2 tbsp)

Additional Ingredients

1 tsp cornstarch, dissolved in a little milk

Shredded coconut for garnish Ingredients

Instructions

1️⃣ Preheat oven: Preheat oven to 350°F (180°C). Butter and line a 18x27 cm baking pan.

2️⃣ Make the dough: In a mixing bowl, whisk together the eggs, a pinch of salt, vanilla sugar and 100 grams sugar until well combined.

3️⃣ Add wet ingredients: Mix oil, 90ml milk and 1 tbsp instant coffee, stirring until smooth.

4️⃣ Mix dry ingredients: Sift flour, cocoa powder and baking powder. Mix until smooth and no lumps remain.

5️⃣ Bake cake: Pour batter into prepared pan. Bake for about 30 minutes or until a toothpick inserted in the centre comes out clean. Let cake cool completely.
