Ingredients:
1 cup peanut butter (creamy or chunky, depending on your preference)
1 cup powdered sugar
3 cups chocolate Rice Krispies cereal
1/2 cup butter (melted)
1 tsp vanilla extract
1 cup semi-sweet chocolate chips (for coating)
1 tbsp coconut oil (optional, for smooth melting of chocolate)
Directions:
Prepare the peanut butter mixture: In a large mixing bowl, combine the peanut butter, powdered sugar, melted butter, and vanilla extract. Stir until smooth and well combined.
Add the Rice Krispies: Gently fold in the chocolate Rice Krispies cereal, ensuring all the cereal pieces are coated with the peanut butter mixture.
Form the balls: Scoop about a tablespoon of the mixture and roll it into small, bite-sized balls using your hands. Place them on a baking sheet lined with parchment paper.
Chill the balls: Once all the peanut butter balls are formed, refrigerate them for about 30 minutes to firm up.
Prepare the chocolate coating: In a heatproof bowl, melt the semi-sweet chocolate chips and coconut oil (if using) in the microwave in 20-30 second intervals, stirring after each, until smooth and fully melted.
