The ingredients for the tomato soup are as follows: - 1 tablespoon of olive oil - 1 medium onion, diced - 2 minced garlic cloves
- 1 can of crushed tomatoes (28 oz) - 3 cups of vegetable broth - 1 tablespoon of tomato paste - 1 teaspoon of sugar (optional, for acidity balance)
- 1/2 teaspoon of dried basil or 1 tablespoon of chopped fresh basil
For smoothness, you may optionally add 1/2 teaspoon of dried thyme and 1/2 cup of heavy cream or milk.
- Optional: season with salt and pepper.
*Two small onions, finely sliced*, *four pieces of crusty bread*, *one cup of shredded cheddar cheese*, *for the cheese and onion toast*.
