Tomato Soup with Cheese and Onion Toast

First, *Prepare the Tomato Soup*.
- A Warm the olive oil in a big saucepan over medium heat. Simmer for about 5 minutes after adding the chopped onion. Sauté the garlic for one more minute, or until it begins to release its aroma.
Once the tomatoes are smashed, add the vegetable broth, tomato paste, basil, thyme, and sugar (if using). Allow the flavors to combine by bringing to a simmer and cooking for 15-20 minutes.
Blend the soup with an immersion blender or move it to a blender gently if you want a smoother texture.
After you've seasoned it with salt and pepper, stir in the milk or heavy cream (if using).
Step 2: Get the Broiler Preheated for the Cheese and Onion Toast. Arrange the bread pieces on a baking pan. Add a couple slices of onion and sprinkle shredded cheddar cheese on top of each piece.
- A Cook the toast in the broiler for three to five minutes, or until golden brown and cheese is melted and bubbling.
3. Assist:
- A Spoon the tomato soup into individual bowls and garnish with chopped parsley or chives, if preferred. Toasts topped with cheese and onion are a great accompaniment to the hot soup.
