Romanian Vegan Potato Stew (Cartofi cu Sos de Roșii)

Ingredients:
6 medium potatoes (peeled and diced into 1-inch cubes)
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 large tomatoes, diced (or 1 can of diced tomatoes)
1 tablespoon tomato paste (for extra richness)
1 teaspoon paprika (sweet or smoked, depending on preference)
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
1 tablespoon vinegar (optional, for a bit of tang)
1/2 cup vegetable broth (or water)
Salt and pepper to taste
Fresh parsley (chopped, for garnish)
