Romanian Vegan Potato Stew (Cartofi cu Sos de Roșii)

Prepare the Potatoes:
Peel and dice the potatoes into small 1-inch cubes. Set them aside.
Sauté the Vegetables:
Heat the olive oil in a large pot over medium heat. Add the onion and sauté until softened and translucent, about 5 minutes.
Add the minced garlic and sauté for another 1-2 minutes, being careful not to burn it.
Cook the Tomato Base:

Stir in the tomato paste and cook for another minute until it darkens slightly. Then add the fresh tomatoes (or canned diced tomatoes) and cook for 5-7 minutes until the tomatoes break down and form a chunky sauce. If you're using canned tomatoes, you can skip the step of sautéing fresh tomatoes.
