Strawberry Cheesecake Chimichangas

Ingredients:

8 large flour tortillas
1 cup cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
1 cup fresh strawberries, diced
1 tsp lemon juice
2 cups vegetable oil (for frying)
Additional powdered sugar (for dusting)
Instructions:

Prepare the Filling:
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth. Fold in the diced strawberries and lemon juice gently.

Assemble the Chimichangas:
Place about 2 tablespoons of the cheesecake filling in the center of each tortilla. Fold the sides over and roll up tightly to form a burrito shape.
