That's why I've put together this Harvest Sheet Pan Dinner using chicken apple sausage slices. This recipe is perfect for those crisp autumn evenings when you want something hearty and healthy but don't have hours to spend in the kitchen. It all started when I realized I had a bunch of leftover fall veggies and some chicken apple sausages, and voila! A new go-to weeknight dinner was born. It's super easy to throw together, and the clean-up is a breeze since it all roasts on one pan.
This Harvest Sheet Pan Dinner is a meal in itself, packed with protein, veggies, and all those warm fall flavors. But if you’re looking to add a bit more to your plate, it pairs wonderfully with a side of crusty bread or a light, crisp salad. You could also serve it over a bed of quinoa or brown rice if you’re craving some extra grains. A glass of your favorite cider or a chilled white wine wouldn’t hurt either!
