Hands down, our favorite dinner to eat during the fall!

1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp garlic powder
Salt and pepper to taste
Directions
Preheat your oven to 400°F (200°C).
On a large sheet pan, scatter the sweet potatoes, red onion, Brussels sprouts, and apple slices.
Drizzle the olive oil over the veggies and apples, then sprinkle on the thyme, rosemary, garlic powder, salt, and pepper. Toss everything to ensure even coating.
Add the sliced chicken apple sausage to the pan, arranging it evenly among the veggies.
Roast in the preheated oven for 25-30 minutes, or until the veggies are tender and the sausage is browned.
Halfway through roasting, give everything a good stir to ensure even cooking.
Serve hot, straight from the pan!
Variations & Tips
Feel free to mix and match the veggies based on what you have on hand. Butternut squash, carrots, or parsnips would be great additions. If you prefer a different type of sausage, go for it! Turkey or pork sausage would work just as well. For a bit of extra sweetness, drizzle a little maple syrup over everything before roasting. And for those who like a bit of heat, a sprinkle of red pepper flakes would do the trick. This dish is very forgiving and versatile – the perfect canvas for your culinary creativity!
