Ingredients:
1 whole chicken (about 4-5 pounds)
2 cups apples, cored and quartered (such as Granny Smith or Honeycrisp)
1 cup fresh cranberries (or frozen, thawed)
1 medium onion, quartered
4 cloves garlic, minced
1/4 cup olive oil
2 tablespoons honey (or maple syrup)
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh thyme or rosemary for garnish (optional)
Directions:
Prepare the chicken:
Preheat the oven to 425 degrees F (220 degrees C).
Rinse the chicken under cold water and pat dry with paper towels. Season the chicken inside and out with salt and pepper.
