Ube Cream Stuffed French Toast

Ingredients
For the Ube Cream:
2 8oz tubs whipped cream cheese
2 cups powdered sugar (sifted)
1 teaspoon vanilla extract
2 teaspoons ube flavoring
For the French Toast Custard:
4 eggs
1 cup milk
1/2 cup vanilla coffee creamer
1-2 tablespoons cinnamon sugar
1 teaspoon vanilla extract
2 loaves brioche bread, sliced thick
Fresh strawberries (for garnish)
Fresh blackberries (for garnish)
For the Homemade Ube Syrup:
1 ½ cups white sugar
¼ cup brown sugar
1 cup water
2-3 teaspoons ube flavoring
½ teaspoon vanilla extract
2 tablespoons cornstarch + 3 tablespoons water (optional, for a thicker syrup)
