Ube Cream Stuffed French Toast

1. Make the Ube Cream:
In a medium bowl, combine whipped cream cheese and sifted powdered sugar. Mix until smooth.
Add vanilla extract and ube flavoring. Mix until well combined.
2. Prepare the French Toast Custard:
In a large bowl, whisk together eggs, milk, coffee creamer, cinnamon sugar, and vanilla extract until well blended.
Dip slices of brioche bread into the custard, allowing them to soak and absorb the liquid.
3. Cook the French Toast:
Heat a skillet over medium-high heat and add a pat of butter.
Fry the soaked brioche bread slices in the skillet until golden brown on both sides. Set aside on a plate.
4. Assemble the Ube Cream Stuffed French Toast:
Using a knife, make a deep slit into the top of each French toast slice.
Pipe the ube cream cheese mixture into the slit and over the top of the French toast.
5. Make the Homemade Ube Syrup:
In a medium saucepan, combine white sugar, brown sugar, and water. If desired, add cornstarch slurry (2 tablespoons cornstarch mixed with 3 tablespoons water) for a thicker syrup.
Bring the mixture to a boil and then reduce to a simmer for about 5 minutes. Avoid stirring during this time.
Remove from heat and stir in the ube flavoring and vanilla extract. Allow the syrup to cool for at least 10 minutes before serving.
6. Garnish and Serve:
Top the stuffed French toast with fresh strawberries and blackberries.
Drizzle with homemade ube syrup and serve immediately.
