2 kg beef tenderloin, trimmed
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
3 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
For the Sauce:
2 cups beef broth
1 shallot, finely chopped
2 tbsp cold butter, cubed
Salt and pepper to taste
