Prepare the mascarpone cream: Mix the mascarpone, quark/yogurt, sugar, and vanilla sugar. Whip the cream until stiff and fold in.
Prepare the berries: Thaw frozen berries, if necessary. Wash fresh berries and chop them if necessary.
Soak the ladyfingers: Briefly dip them in fruit juice in a shallow dish (not too long, otherwise they'll get mushy!).
Layers:
Biscuits
Mascarpone Cream
Berries
Repeat, finishing with berries.
Chill: Let it chill in the refrigerator for at least 2 hours (preferably overnight).
Serve: Garnish with fresh mint, grated chocolate, or praline.
