Preheat your oven to 375°F (190°C).
Cook the bacon in a skillet over medium heat until crispy. Remove and let it drain on paper towels, then crumble into small pieces.

In a saucepan over medium heat, combine the heavy cream, mozzarella, and Parmesan cheese. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper.
Place the cooked gnocchi in a ceramic baking dish. Pour the cheese sauce over the gnocchi and gently stir to coat.
Sprinkle the crumbled bacon over the top.
Bake in the preheated oven for 15-20 minutes, or until the top is golden brown and bubbly.
Garnish with chopped chives or green onions before serving.
Variations & Tips
For a vegetarian version, simply omit the bacon and add sautéed mushrooms or spinach for extra flavor. If you have picky eaters, you can substitute the mozzarella with a milder cheese like cheddar. For a gluten-free option, use gluten-free gnocchi available at most grocery stores. You can also add a pinch of nutmeg to the cheese sauce for a subtle warmth that complements the dish beautifully.
