Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the puff pastry sheets on a lightly floured surface and cut them into 12 equal squares.
Place the pastry squares onto the prepared baking sheet, spacing them evenly apart.
In a medium bowl, mix together the ricotta cheese, cream cheese, Parmesan cheese, egg, and a pinch of salt and pepper until smooth and well combined.
Spoon a generous tablespoon of the cheese mixture onto the center of each pastry square.
Fold the edges of the pastry squares slightly over the filling to create a border.
Brush the edges of the pastry with olive oil to help them turn golden brown during baking.
Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
Remove from the oven and sprinkle the chopped chives and parsley over the top of each tartlet.
Allow to cool slightly before serving warm.

For a different flavor profile, try adding some crumbled cooked bacon or sautéed mushrooms to the cheese mixture. You can also experiment with different herbs, such as thyme or rosemary, depending on what you have on hand. If you're looking to make these tartlets a bit more substantial, consider adding a slice of tomato or a few spinach leaves under the cheese filling before baking. For a touch of heat, sprinkle a pinch of red pepper flakes into the cheese mixture.
