600g firm white fish fillet (cod, pollock, hake, etc.)
2 tbsp olive oil
1 onion, chopped
2 garlic cloves, chopped
400g canned crushed tomatoes
1 tbsp tomato paste
1/2 glass dry white wine (optional)
1 tbsp capers
50g pitted
green or black olives
1 pinch chili pepper (or Espelette pepper)
Salt, black pepper
Chopped fresh parsley (or basil), to serve
