Recipe for eggplant bread stuffed with cheese

Ingredients:
For the Bread Dough:

2 ¼ tsp (1 packet) active dry yeast

1 tsp sugar

¾ cup warm water (110°F / 45°C)

2 cups all-purpose flour (plus more for kneading)

1 tsp salt

2 tbsp olive oil

For the Eggplant Filling:

1 medium eggplant, diced (about 2 cups)

2 tbsp olive oil

2 garlic cloves, minced

Salt & pepper to taste

½ tsp smoked paprika or chili flakes (optional)

1 tsp dried oregano or fresh basil (optional)

For the Cheese Filling:

1 cup shredded mozzarella (or a mix of mozzarella and provolone)

½ cup crumbled feta or ricotta (optional for added creaminess)

¼ cup grated Parmesan
