Provençal Cod Fillet with Cherry Tomatoes and Olives
Ingredients:
4 cod fillets (about 150-200g each)
200g cherry tomatoes, halved
100g pitted black olives (Kalamata or Niçoise)
3 cloves garlic, thinly sliced
1 small onion, finely chopped
2 tbsp olive oil
1 tbsp capers (optional)
1 lemon (juice and zest)
1 tsp dried Herbes de Provence (or a mix of thyme, rosemary, and oregano)
Fresh parsley, chopped (for garnish)
Salt and freshly ground black pepper
