Lightly salted "minute" cucumbers. My husband only asks for this recipe.

Wash the cucumbers and slice them thinly, depending on their size (best with a knife or mandoline).

Place the cucumber slices in a bowl, sprinkle with salt, and mix well.

Let them sit for 10-15 minutes to allow the cucumbers to draw water and soften slightly.

Then gently squeeze or drain the liquid.

Add vinegar, sugar (if using), pepper, and garlic and mix well.

Fold in fresh herbs, if desired.

Let it sit briefly (5-10 minutes), then serve immediately.

Tip:
For an extra freshness boost, you can also briefly soak the cucumbers in cold water beforehand; this will make them extra crisp.
