Ingredients:
1 cooked chicken breast
2 medium-cooked carrots
2 tablespoons of cream cheese or ricotta
2 tablespoons of mayonnaise (optional for a creamier texture)
1 garlic clove (optional)
Salt and pepper to taste
A drizzle of olive oil or lemon juice for a special touch
Preparation:
Cook the chicken breast in salted and spiced water (you can steam or boil it).
Boil or steam the carrots until very tender.
In a food processor or high-powered blender, combine the shredded chicken, diced carrots, cream cheese, mayonnaise, garlic (if using), and a drizzle of oil or lemon juice.
Blend until smooth.
Adjust salt and pepper to taste. Serve cold with toast, breadsticks, pita bread, or crackers.
