I whip these up at least a few times annually because they are incredibly tasty and easy! I can already savor the flavor!

Preheat your oven to 375°F (190°C) and line a baking sheet with foil.
In a small saucepan over medium heat, combine the honey, brown sugar, soy sauce, Dijon mustard, garlic powder, black pepper, and salt. Stir until the sugar is dissolved and the mixture is smooth.
Add the sliced chicken to the saucepan, stirring to coat the chicken evenly with the glaze. Let it simmer for about 5 minutes, allowing the flavors to meld.
Unroll the croissant dough and separate it into triangles. Place a few slices of the glazed chicken on the wide end of each triangle.
Roll up the dough, starting from the wide end and tucking in the sides as you go, to enclose the chicken.
Place the rolled croissants on the prepared baking sheet. Brush the tops with melted butter.
Bake in the preheated oven for 12-15 minutes, or until the croissants are golden brown and flaky.
Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
Variations & Tips
For a spicier kick, add a pinch of cayenne pepper to the glaze. If you prefer a tangy twist, try adding a tablespoon of balsamic vinegar to the glaze mixture. For a cheesy version, sprinkle some shredded mozzarella or cheddar cheese over the chicken before rolling up the croissants. You can also substitute turkey or ham for the chicken if you have leftovers from a holiday meal. For picky eaters, consider serving the glaze on the side as a dipping sauce, allowing them to control the sweetness.
