I no longer patronize bakeries because I bake apricot cake myself, which I cook in just 7 minutes.

Beat the eggs with the sugar until a loose dough forms, then pour in the kefir and vegetable oil and mix well. In a separate bowl, mix the flour with the baking powder. Gradually add this mixture to the liquid ingredients, whisking continuously.
Cut the washed and dried pitted apricots into pieces and place them in the dough. If you use canned fruit, be sure to drain off any excess liquid.

Then pour the dough into a greased baking dish with a diameter of about 26 cm and place in a preheated oven at 180 degrees. Bake for 40 minutes or until golden brown.

Apricot tart in 7 minutes

After cooling, the finished baked goods can be sprinkled with powdered sugar.
