Add all ingredients into a tall jar or container (wide enough for an immersion blender).

Place the immersion blender at the bottom and start blending on low.

Slowly move the blender upward as it emulsifies — it thickens within seconds.

Taste and adjust salt/lemon/mustard as needed.

✅ Tips:
Soy milk or aquafaba helps emulsify (like egg would).

Lemon juice gives the acidity vinegar usually provides.

Chill before using for the best texture.
