Healthy Potato and Zucchini Croquettes 🥔

Crispy on the outside, juicy on the inside – no frying required! Perfect as a snack, side dish, or for meal prep.
Ingredients (for approx. 12–15 croquettes)
Main ingredients:
300g potatoes (floury, peeled & diced)
1 small zucchini (approx. 150g, grated & squeezed)
1 egg (or 2 tbsp flaxseed flour + 3 tbsp water for vegans)
3 tbsp oatmeal or breadcrumbs (for binding)
2 tbsp cream cheese or hummus (for moistness, optional)
Spices:
½ tsp garlic powder, ½ tsp paprika
Salt, pepper, 1 tsp dried herbs (e.g., oregano)
For the coating:
2 tbsp breadcrumbs or breadcrumbs
1 tbsp sesame seeds or ground almonds (for extra crunch)
For frying:
1–2 tbsp olive oil or parchment paper (for oven-baked version)
