Whisk all fajita seasoning ingredients together in a small bowl.
Heat 1 tbsp oil in a large skillet over medium-high heat.
Add onions and peppers, season with half of the fajita seasoning, and cook for 3-4 minutes until crisp.
Remove peppers and onions from pan and set aside.
Place steak strips on a cutting board, sprinkle with remaining seasoning and top with peppers and onions. Roll up and secure with toothpicks.
Heat remaining oil in pan over medium-high heat.
Cook beef rolls for about 2 minutes per side until browned.
Sprinkle with parsley/cilantro and green onions. Enjoy while hot! 😋❤️
